The speed at which it implants and starts the fermentation, as well as its resistance to high alcohol contents make L.A. Bayanus a specialised yeast for restarting stuck fermentations, even under difficult conditions.
L.A. Bayanus has a high fermentation capacity, and is able to restart stuck alcoholic fermentations in a medium with up to 15% abv. It also consumes SO2 during the fermentation.
