AntiOx Fruit® is an antioxidant composed of 50% potassium metabisulfite (E224) and 50% L-ascorbic acid (E300).

AntiOx Fruit® provides comprehensive protection against oxidation, preserving the aromatic potential of fruit juices and juice-based fermented beverages.
By removing oxygen, AntiOx Fruit® inhibits laccase and polyphenol oxidase activity—which otherwise polymerize into highly oxidation-active dimers and trimers—thus safeguarding polyphenols and related compounds.
